Whole 30 Recipe - Sausage and Squash Noodles

I'm still going strong on The Whole 30 have been enjoying cooking.  You can watch more about my Whole 30 on my YouTube channel. These noodles are delicious and easy to make!  Just a few ingredients and a delicious meal awaits you!

Ingredients:
2 Sausage Patties
2 Bell Peppers
1 Large Onion
Olive Oil
2 Cups of Mushrooms
2 Yellow Summer Squash

Directions:
1.  Cut your peppers and onions in long strips and place them in the oven to roast for 20 minutes on 350 degrees.  (I already had mine roasted)
2.  While peppers and onions are cooking, use a spiralizer to make squash noodles.  Once done, wrap the noodles in paper towels to cut down the moisture.
3.  Turn your skillet on medium and drizzle olive oil.  Cut your sausage patties and let the sausage cook on one side, then flip over to the other side to continue cooking.
4.   Add in your mushrooms to cook with the sausage
5.   Once the mushrooms look almost done, add in the squash noodles, peppers and onions.
6.   Let cook for 2-3 minutes, test the squash after 2 minutes to ensure it doesn’t become too mushy.

Optional:  Serve with tomato sauce or diced tomatoes.

Enjoy!

Tortuga Music Festival - Day One Recap

If I could describe Tortuga Music Festival in one word.... it would be AMAZING.  For those of you who may be wondering, Tortuga was held this year from April 11-12 at Fort Lauderdale Beach in Florida.  It's a country music festival and the line up included: Kenny Chesney, Zac Brown Band, Jake Owen, Chase Rice, Sam Hunt, Dylan Scott, Maddie & Tae, David Nail, Josh Turner, The Band Perry, and more!

I don't think it's possible for me to fit my experience in one blog post... so here's my recap of day one.

We walked a half hour down the gorgeous boardwalk in Fort Lauderdale, down the beautiful A1A.  Of course we had to make a pit stop at Starbucks for a green tea lemonade.  I can never turn down one!  Then we proceeded to make our way to the registration on the beach for Tortuga.  Registration was supposed to open a half hour before we arrived.  When we arrived, it still was not open.  That was frustrating, because as you can imagine, it was quite toasty waiting in line a the beach.  However after about 15 minutes, it opened!  Once it was open, it was a smooth process getting into the festival.

The first day was kind of hectic.  I had no idea what to expect.  I was still adjusting to the Florida heat so I drank 7 water bottles that day.  I wanted to make sure I stayed hydrated and kept cool because I did not want to get heat exhaustion.  Although it was really hot, the cool breeze felt wonderful at night during the shows.

The festival was not just about music, a main focus of Tortuga is ocean conservation.  When I was little, I wanted to be a marine biologist.  I loved learning about dolphins, manatees and the ocean.  Rock the Ocean was a main sponsor of the event and they had displays all around the festival.  It was great to know that a portion of my ticket went to support Rock the Ocean.

Back to the music.  Day one we started off with seeing David Nail then we saw Trace Adkins, Josh Turner, Jake Owen and Kenny Chesney.

Here's a video that has a few clips from Tortuga:

Jake Owen was my favorite of the day.  At first I didn't recognize him with short hair!  He really knows how to interact with the crowd.

Day One was great and it was so surreal to be at the festival.  Being able to listen to some of my favorite country artists on the beach was a dream.

Have you ever been to a music festival?  Let me know which one in the comments!

I'm Back on YouTube!

Finally the day is here... I'm back on YouTube!

In the video I discuss how excited I am for Tortuga Festival.  I cannot wait!  50 days until I'm in Florida!  I also talk about how I need to get back into shape.  I'm thinking about doing the Tone It Up 7 Day Slim Down (7DSD) this week to help get me back on track.  Also I discuss my love for country music!

I'm thinking about doing a few travel and festival themed blog posts and videos. Let me know if you like those ideas.  Always feel free to leave your requests and ideas in the comments! Follow my blog with Bloglovin

Tortuga Music Festival!

This is the view outside my window right now... snow. But all I can think about is the beach!

My countdown until April 8 has begun!  At 6:30 p.m. on April 8, I will departing Connecticut and be in the sweet sunshine state!  I cannot wait to go to the beach, soak up the sun, and sing along to my favorite country artists.  On April 10-12 I'll be at the Tortuga Music Festival!  First off, it's on the beach, in one of my favorite places.. Fort Lauderdale, and has some of my favorite country artists!  I bought the General Admissions ticket because that was all they had left, but I can only imagine how amazing their VIP packages are! Luckily they have a really fun Loyalty Program going on, where you can win awesome prizes such as meet and greets!

I went to Fort Lauderdale last year during my spring break and loved it.  The beach there is absolutely stunning, the people are so incredibly nice! It definitely was a dose of medicine to heal the bitter winter.

First off.. can we just admire that spectacular line up?! I cannot wait until I get to sing "Toes" by Zac Brown Band with my actual toes in the sand, and a cold drink in my hand.  Life is good!  (ZBB fans.. see what I did there?) :)  The person I am most excited to see is Sam Hunt!  I think he is a phenomenal signer and songwriter.  I have been waiting for him to come to CT, but I am more than happy to see him perform in Florida!

I would love to fast forward time to April!  I suppose I should have put a forewarning on this post about the overuse of the word exciting, and overuse of exclamation points..but I cannot contain my excitement!

Bring on the sunshine, music, and unforgettable memories!

This is my first time going to a music festival on the beach.  If you went last year, or have any tips on what to bring, please leave them below!
