This is actually a pumpkin cake that I made in a mug. I flattened and shaped the cake using a cookie cutter!
Ingredients:
- 1 egg
- 2 tablespoons milk (I used almond milk)
- 1/4 cup pumpkin
- 7 tablespoons of flour
- 1/4 teaspoon of baking powder
- 2 tablespoons sugar (add more if you have a sweet tooth- mine wasn't that sweet!)
- Combine ingredients
- Place in mug
- Microwave on high for 1 min 30 seconds - stop - then microwave again for 1 min 30 seconds (the cake will rise in the mug - doing it in increments helps it from toppling over)
- Let cake cool
- Remove from mug and flatten on a plate
- Use cookie cutter to create pumpkin shape!
