Coconut Flour Pancakes - Just 3 Ingredients!



This morning I was in the mood for pancakes, and was all set to make my protein pancakes.  However I'm running low on protein powder, and wanted to use an alternative.  I used coconut flour and the pancakes tasted amazing! These are also grain free and gluten free!

What you need:
  • 2 1/2 teaspoons Coconut Flour (Use more if the batter is still wet)
  • 1/4 cup egg whites
  • 1/2 banana
  1. Mash banana then add egg whites
  2. Stir in coconut flour until all ingrients are blended
  3. Lightly coat the pan with nonstick spray
  4. Scoop the batter onto the pan, and spread it out evenly to create a pancake
  5. Cook for a few minutes, gently lift the edges of the pancake up to see if it is done, then flip.
Enjoy topped with fresh fruit!
