This morning I was in the mood for pancakes, and was all set to make my protein pancakes. However I'm running low on protein powder, and wanted to use an alternative. I used coconut flour and the pancakes tasted amazing! These are also grain free and gluten free!
What you need:
- 2 1/2 teaspoons Coconut Flour (Use more if the batter is still wet)
- 1/4 cup egg whites
- 1/2 banana
- Mash banana then add egg whites
- Stir in coconut flour until all ingrients are blended
- Lightly coat the pan with nonstick spray
- Scoop the batter onto the pan, and spread it out evenly to create a pancake
- Cook for a few minutes, gently lift the edges of the pancake up to see if it is done, then flip.
Enjoy topped with fresh fruit!
